Good morning, friends!
A while back (longer than I’d like to admit) I wrote a post saying that I was starting a new series: 15-minute dinners!
Apparently, healthy 15-minute dinners is a semi-annual series, because post #1 was last October, and post #2 is, well…today. Ha! There’s a reason for this, though: I tend to eat the same 5-7 dinners over and over again, and they all take 15-30 minutes max to make.
But, I have some redemption coming. I’d say one of my top 3 requests that I get from clients are dinner ideas that are quick, healthy, and easy. Instead of taking several hours to write up a blog post for each one, along with an initial 3-sheeter with ridiculously easy meals that I send them – I created a Pinterest board specifically for those clients who have the same four dinner requirements as I do (quick, healthy, easy, tasty.) Of course, you’re welcome to follow along even if you’re not a client, and can do so here.
However, this week I decided to put one of my go-to meals on the blog in the form of my very favorite chicken parmesan.
Now, the word ‘healthy’ is highly debatable, as evidenced by the recent uproar about KIND snacks putting ‘healthy’ on their labeling due to the fat content (which comes from nuts…and nuts are…what? not healthy? I digress.) So I’ve listed a few alternatives in the video if that’s your thing.
For example, I use bread crumbs on my chicken in this recipe. Bread crumbs get a bad rep, but in totality, I’m honestly only using about 2-3 tablespoons of bread crumbs per chicken breast. I see nothing wrong with that. But, you could totally use almond meal and call that healthy (unless you’re the FDA, but again, I digress.)

And for those of you who don’t care about visuals, or just don’t want to see me carrying on in the kitchen for 8-minutes, here’s your pin-it-for-later graphic.
We usually eat this meal with garlic bread, which I’ll make the executive call and call that pretty blatantly not healthy. My suggestion: heat up a baked potato in the micro and top it with greek yogurt!

Stir fries are my quick go to dinners. I usually always have chicken and veggies in the freezer along with rice in the pantry, so even if I’m not planning on it I have the ingredients.

15-minute dinner is quite impressive! I can usually get some done in 30 minutes, but 15 minutes when feeding a family of 4 isn’t really enough time for me! My quickest dinners are frittatas or poached eggs. I can also make a pantry pasta dish pretty quickly!
I’m all about quick meals! I just made a dish in 10 minutes and it was so awesome – loved having that extra time in my day (not behind the stove)!
