How about some fudgy brownie low carb protein bars in your life?
(and how’s that for a mouthful?)
Speaking of mouthful, this past weekend I did a little early birthday celebrating (today’s my actual bday) with some shopping, going to see a movie with friends and Shane, — and brunching.
Some of the best biscuits I’ve ever eaten at Lucille’s. If you’re ever visiting Boulder, make sure you make a stop — and top with the strawberry rhubarb homemade jam.

I’ve got one last birthday surprise this evening (on a date to a mystery restaurant,) and then going out with some friends again next weekend. All birthdays should extend 1-2 weeks, right?
You guys. Last week I spent a little creative time in the kitchen trying to whip up a low carb snack to share with my clients, boot campers, and community.
After one failed attempt (hello too much coconut flour,) the second batch came out to a lovely fudgy consistency.
Truthfully, I wanted to make these because I normally just grab a powercrunch bar if I need a snack, and wanted to make my own bar with ingredients made from whole foods.
They are lower in carbs, and higher in fat and protein, with macros sitting at 16F 4C 11P for one square.

Ok. I swear I saw two recipes here earlier. I didn’t know which one to make, so I made the other one that was posted. I think i was suppose to make this recipe, as mine weren’t creamy! I will need a redo to try the recipe again. 🙂
I’m so sorry, Jennifer! Yes, after I’d realized my mistake (the key is to make sure you either use liquid or melted coconut oil — and I realized this might not be clear to some! This will lead to dryness) I edited ASAP. I wouldn’t necessarily describe them as creamy, though, but the batter definitely shouldn’t be dry.

I made these this weekend and they turned out great! Definitely more fudge like than brownie, but I think the picture looks more like fudge, too 🙂
