For various reasons, I start nearly every morning with a breakfast lower in carbohydrates. It’s one of my nutrient timing practices, and because of my schedule, training, goals, energy, etc. I feel better starting out the day higher in protein and dietary fat.
If you follow me on either Snapchat or Instagram Stories, you probably have been my go-to breakfast that is my bison breakfast scramble with sausage seasoning.
Well, the other day I ran out of both ground bison and my beloved breakfast sausage seasoning, and decided to go for something else like an omelet or an egg + egg white scramble.
Then I remembered one of my new clients, who I also have eating lower carb in the morning, telling me she dearly missed her breakfast sandwiches. To help her out, I searched the web and provided her with a low carb version!
And then, I remembered that I had a ridiculously simple recipe stowed away in my gcal notes from several years back (I believe 2012) that only takes :90 to make. No literally – it’s been saved as a “task” in my calendar since then.
Perfect. (I have tweaked the ingredients a bit this time around – see below for recipe :))
Since the recipe for the “bun” contains enough fat for one meal (for me) I fill it up with turkey bacon and egg whites.
Low Carb Breakfast Sandwich Recipe
8g. coconut oil, melted
15g. almond flour
1 egg
2g. baking powder
desired herbs and seasonings (I like S&P and thyme)
100g. egg whites
2 pieces turkey bacon
Mix together the oil, almond flour, egg, baking powder, and seasonings in a small bowl, and microwave it for :60-:90. While it cools, cook up the egg whites and turkey bacon as desired (sometimes I do stove, sometimes microwave because #inahurry.) Slice the bun in half with a serrated knife, and build your sammie!

I don’t see myself replacing this with my bison scramble for too long, just because I love the health benefits of eating bison first thing in the morning, plus it’s supa dupa tasty. But it’s a nice alternative for when I run out!
