Good morning! I hope you had a lovely Memorial Day weekend.
We took full advantage of it with backyard barbecues, hiking with friends, grilling out, all laced with that enamored “summer is HERE!!” feeling. I mean, I even ordered a hammock on Amazon on Saturday.
I do love me some winter in Colorado, but the fact remains, I just love to play in warmer weather better. Cannot wait to go camping, hiking, rafting, etc.
So today I wanted to share with you a “recipe” that I’ve been sharing with my online boot campers for quite some time. It’s my version of sweet and sour chicken.
Now, when I say “my version of…” and any dish, you can automatically assume three things:
All of which are, indeed, true for my-version-of- sweet n sour chicken, as well. I guarantee most of you have these ingredients in your pantry.
Trainer Paige’s Sweet and Sour Chicken
Ingredients
1 lb. chicken breast, cooked and cubed
2 t. soy sauce (I used coconut aminos, actually)
2 T. apricot jam (I used smucker’s low sugar)
1 t. apple cider vinegar or rice vinegar
1 t. crushed red pepper
Cook the cubed chicken in a pan with 1 t. oil (I used avocado oil.) Add salt and pepper to season. Once cooked, add in the rest of the ingredients. I typically enjoy mine with a side of broccoli and Trader Joe’s frozen rice medley (cooked in the microwave, obv.)
Boom. Quick, simple, easy.

Love your “recipe!” I’ll do the same with low sugar teriyaki or TJs low fat Asian style dressing. So easy and yummy.
