Good morning and happy Friday, my friends! I hope you’re having a great week.
Mine’s been pretty busy, I have to admit. Since last weekend was jam-packed with Blend festivities, I had a lot of catch up work come Monday morning. That lasted most of the week, and I can’t believe we’re to Friday again already.
You might know that I recently moved into a new house – our first house that we’ve bought here in Colorado! While we live in the same town that we did while renting, we moved farther west toward the mountains. And if you know me, you know I’m just stoked about that aspect of our new location.
Last summer I got really into trail running; I’d go 2-3 times a week! While there were plenty of trails nearby, I still always had to drive a few miles to get to them. Well, since we live closer to the mountains now, I recently discovered a trail that’s accessible to run on right outside my door!
I’ve been taking advantage, and running to the Lagerman Reservoir a couple times a week, just to sit, reflect, and take in the mountain lake beauty for 10 or so minutes before heading back home. What’s even more exciting about Lagerman Res is that it was discovered by the first Swedish settlers here in Colorado! It even used to be called Swede Lake. My grandparents were from Sweden, so I geek out whenever I come across anything related to my Swedish heritage.
I guess you could say that the mountains are my biggest inspiration when it comes to (trail) running. I probably wouldn’t run at all if it weren’t for those big ol’ pretty rocks!

After yesterday afternoon’s jaunt to the reservoir, I came home to a little snackage to fuel my heart-pumping adventures:
Overnight Oats – Aussie style
What makes them Aussie style is that I used Yulu yogurt – an authentic Australian yogurt that literally tastes like no yogurt I’ve ever tried before. It’s smooth, delicious, and extra creamy, but not super sour like some of the Greek-style yogurts out there because it’s been double smoothed for extra creaminess.
It was perfect for a post-workout snack, because while Yulu clocks in 9 grams of protein per serving, it also contains 14-17 grams of sugar. That said, the sugar is from all natural sources like honey, fruit, and cane sugar. I’ve actually been enjoying it also as a nighttime snack – because it’s a great nutritious alternative to ice cream!
For my overnight oats, I used my standard formula, with a few tweaks.
Combine all of the ingredients in a bowl and set in the fridge. Go adventuring for about an hour, come back, and dig in!
