Hey loves – how’s your week going? Mine’s great, but things have been busy. We’re in the middle of the Fit and Festive Challenge, sign ups for the Resolve Group Coaching Program open next week (more deets on that ASAP!) and I’m leaving for vacation next week! At least everything’s got a hefty dose of fun along with it đ
With that said, today, I have a post from a very dear friend of mine with a very delicious recipe at the end. Trust me. I made it as soon as this culinary ball genius sent it to me and it took me less than 10 minutes! I first met Lindsay at Blend 2013, but it felt like I’d known her long before that. I consider Lindsay one of the kindest and most generous people I know…who also happens to make some of the best ball-shaped bites I’ve eaten – Healthy Bites.

Hi there Friends! My name is Lindsay Cotter and I blog over at Cotter Crunch. I’m a pro triathlete’s wife, nutrition and fitness consultant, kombucha and wine lover, and Gluten Free cook! Itâs funny, this is my blogâs subtitile and yes, it really does describe my life. But the main reason I blog is support my husband. Weâve created this dream together. A dream to pursue HIS professional triathlon career and I get to play wing man woman, actually itâs Sherpa wife. Either way, Iâm by his side.
Iâd say my best support comes through food and fueling. Iâm good at feeding that man, or so I like to think.
In an effort to help James (aka the Kiwi Cotter) fuel properly for pre and post workout, I started making him healthy bites. What are healthy Bites? Glad you asked.
Healthy Bites are my take on functional gluten free bite sized âballâ snacks. Each bite is made with natural, gluten-free and mostly organic ingredients.Â
What started off as a real food and gluten free snack option, to help with my personal health and my husbandâs training, has now turned into my own little business. I am passionate about it and want to share these bites with othersâŠkids, athletes, on the go momâs, food allergy folks, and more! My mission is to make gluten free and process free food that actually tastes really good.
Sheesh, do I sound like a Corny Cotter or what? Haha.

Anyway, today I wanted to share with you a sneak peak recipe from my Healthy Bites Ebook!
Cookie Crumb Protein Bites
Ingredients
2/3 regular peanut flour (can use coconut flour or almond meal)
1/4 heaping cup protein powder of choice
1/4 to 1/3 cup coconut peanut butter
1/4 to 1/3 cup honey or maple syrup
1 tsp coconut extract
1/4- 1/3 cup favorite GF cookie (crumbs) (i used a gluten free Udis Brand)
optional : add in white chocolate chips, nuts, coconut, etc.
Directions:
This recipe is super easy because you donât need to grind anything! just mix up dry ingredients first, then add in peanut butter, extract, and honey. Mix well, then roll into balls/bites. Freeze right away then store in fridge or freezer to maintain freshness. Makes around 20 bites, give or take.
NOTE â>Â if you add in more coconut or have a thick protein powder, you might need to add more honey and/or nut butter to keep batter from being to dry.

Hi guys! Paige here again – I made these last night using 1/3 c. almond flour + 1/3 c. coconut flour. I added a wee bit more almond butter, and also subbed NuNaturals chocolate sauce for the honey…they turned out DELICIOUS.
I also made the mistake of making them before dinner. Do not do this, or else dinner=ruined đ Â Also, Lindsay’s right – these are a CINCH to make!
