Good morning! I hope you’re having a great weekend so far.

I’ve got the day off today to rest and recover, as I’ve spent the rest of the weekend working at Great American Beer Fest for KIND. Man, working at a beer fest is kind of like being the sober designated driver at a NYE party, but times 10000. Let’s just say today is most definitely a rest day Winking smile I did get in some fun workouts earlier in the week, though!

Monday: Full body lifting

Tuesday: taught spin

Wednesday: 3.1 mile trail run + full body lifting

Thursday: taught spin

Friday: 4.5 mile trail run

Saturday: Full body lifting

So, I’m starting a new series on the blog! 15 Minute Dinners. It’s really all the time I ever feel like spending on dinner, and I’m sure you struggle with the same thing. There just aren’t enough hours in the day!!

I’ve also been having a lot of fun experimenting in the kitchen. On Thursday I shared two deliciously easy pumpkin recipes, and today I wanted to share my favorite fish tacos today, since they feature a very special main star!

Sizzlefish! This past week in YTP Boot Camp, Sizzlefish is our check-in challenge giveaway, so I thought I’d feature it in today’s recipe post. (Disclaimer: I received this fish from Sizzlefish for free. However, I’m not being compensated for this post, and all opinions are my own <—always are.)

Fish tacos are a staple in our household, along with beef tacos, bison tacos, and chicken tacos. We do a lot of Mexican food over here! I love fish tacos because they’re a little lighter than the rest, and have such a great flavor! They’re so versatile, too, because just about any type of fish works for fish tacos! Thusly, I chose Salmon for this taco dinner.

I know fish tacos aren’t a revolutionary meal, but I keep my fish seasoning and cooking methods simple, and let the fish be the star. If you make sure to use top quality fish, you shouldn’t need to mask its flavoring with tons of seasoning! Plus, I add a special ingredient at the end, which is my most favorite dressing ever for fish tacos – Cilantro and lime. They go together like peanut butter and jelly. I mean, have you tried Chipotle’s cilantro lime rice? I could eat bowl after bowl of that stuff.IMG_7959

These fish tacos are a great option for a busy work or school night. It takes me 15 minutes to make this dish from start to finish. Perfect for when I’m training until 6 (I typically work until 6, whether it’s in the gym or at home online) and just want to get dinner done fast. Heck, when don’t I just want to get dinner cooked fast?! Aside from the fish and red cabbage, most of the ingredients are pantry staples, too!

They’re also one more important thing – good for you! In fact, these make a perfect lunch or dinner for nearly every client whom I’m giving guidance to on nutrition. (I give FREE nutrition guidance along with all of my online training programs – and I currently have one spot open!)

Sizzling Salmon Tacos with Cilantro Lime Greek Yogurt Sauce

 

3 tbsp. olive or vegetable oil

2 portions of Sizzlefish Salmon (or fish of choice – about .75 pounds for 2 big servings)

1/8 tsp. cayenne

1/2 tsp. paprika

1/4 tsp. garlic powder

salt and pepper to taste

red cabbage and avocado for topping

taco shells

for the sauce:

1/2 c. plain Greek yogurt

1 tbsp. cane sugar

1/4 tsp. cilantro

juice of 1/2 lime

Heat the oil in a pan over medium heat, and then add your fish. Immediately sprinkle in the seasonings, and cook the fish until opaque (5-8 minutes,) chopping it up a little with the spatula as you do so. While it’s finishing up, make your sauce by placing all of the sauce ingredients in a small bowl, and whisk together until mixed. Place your fish meat in your taco shells and dress with the cabbage, avocado, and then drizzle on the sauce.

Mmmm. My favorite. Especially since I made this on Friday before heading to GABF in 15 minutes!! I love making a delish dinner that takes no time at all to prepare.
