Starbucks PSL + a No Bake Cranberry Crunch Protein Bar
Good morning! I hope your week is off to a good start.
Man, having Monday off really threw me through a loop. I thought I had everything ready to go Monday night, but come Tuesday morning, it seemed everything that could go wrong did! From doctor’s appointments to double booking myself to pets getting sick, my cool was tested with each event.

Today I thought it’d be fun to show you a What-I-Ate post of sorts since it’s been a while since I last wrote one. I’ll be sharing my entire day’s eats from Monday (Labor Day,) but with a few other meals sprinkled in here and there.
I woke up early on Monday morning (6:45a) and lazed around for a bit. I love taking at least 15 minute to read the bible or my devotions, and jot down some verses in my journal that speak to me while sipping coffee. This verse in particular spoke to me, so I thought I’d share it here, in case it speaks to any of you.
I need this reminder every day, so I even made it into the dimensions of an iphone lock screen, and set it as my background.
Anyway, whilst reading that verse, I was sipping french press coffee and kombucha on this and munching on a protein waffle (kodiak cakes, because I’m out of my beloved flapjacked – sad face!)
This was my second waffle, because I was still hungry after one, and I ate half of it. It was topped with a little butter and maple syrup.
I have to say, I have felt SO uninspired when it comes to making breakfast. What used to be my favorite meal of the day is now just the annoying time that I need to get food into my belly. It’s as if I simply can’t be bothered to take more than 10 minutes to get food on a plate. I’m sure it will pass.
About an hour after breakfast I headed over to Heil Valley Ranch to do a tough 7.7 mile run. It was glorious, and afterward I stopped by Starbucks to grab an iced PSL
Except they heard me wrong and made it hot. Not one to make a barista re-make my drink (and I’m only 85% sure I said “iced”) I drank it anyway, and then promptly got a tummy ache.
About two hours later, my stomach ache subsided and what replaced it was undeniable HUNGER. So I made my go-to protein shake:
Almond milk + my new fave vegan protein powder + greens powder + banana + strawberries + PB + spinach. Want to know a tip for keeping your spinach fresher, longer? Blow into the bag and then seal it tightly before placing it back in the fridge.
The CO2 keeps it from wilting and getting gross and slimy. (and yes, I was still in my robe at this point in the day.)
I also downed a bag of my most favorite snack ever – sweet plantain chips – with my smoothie.
Green smoothies have been my lunch of choice as of late, but I’ve also been digging grilled cheese sandwiches on sourdough bread. I’m also still loving celery + PB (AB in the case below) for snacks.
It was about 2pm at this point, and we had plans to go to a friend’s barbeque in a few hours, so I got started on making some Tennessee Peach Pudding to bring over. I forgot to snap a picture of it, so here’s one from the website.
It was realllly delicious, but would have been complete with some vanilla ice cream scooped on top.
Anyway, when we got to our friend’s house, we snacked on cheese and crackers, and then had a dinner of chipotle cheddar bratwurst, carrot dogs, peppers and onions, and potatoes. With some white wine.
Oh, and some peach pudding and strawberry pie. Shane and I split a piece of both.
It was the perfect ending to a delightful weekend!

I’m totally with you on the breakfast thing lately! It’s almost an annoyance to prep something which is weird for me since breakfast used to be one of my favorite meals and something I looked forward to every.single.day. To make it easier, I’ve been making huge batches of Flapjacked pancakes and freezing them to make it easier to pull a few out, heat ’em up, and add the toppings. I’ve also been enjoying toasted English muffins with various toppings.
Awesome trick for the spinach bag!! Definitely giving that a try!

I almost always eat either cold cereal like Kashi GoLean or oatmeal….my breakfasts are pretty boring! Although I did make a pumpkin maple coffee cake this morning and it was delicious!

you just changed my world with the spinach trick. seriously! i rarely buy spinach these days bc i hate how nasty it gets. the best thing i ate today…well i’m on day 3 of a juice cleanse so my answer is JUICE. the 2nd of the day was pineapple, apple, and mint and it was deeeelicious.
I’m finding it actually works! The trick is to make sure to seal it really tightly.
I’ve been scrambling egg whites with veggies and topping it with cinnamon and a little maple syrup. 🙂 Strange but oh so good…it’s my current obsession!!
