Good morning - I hope you all had a great weekend!
My weekend was pretty low key, but on Saturday morning, Shane and our friends David and Jamie set out on an adventure to hike to Chasm Lake. It was so much fun – and one of the coolest and prettiest hikes I’ve done, but it also included the scariest moments I’ve ever had during a tough hike. But I’ll be talking more about that later this week
The hike was kind of a “see-ya-later” to Colorado, as I’m currently in Florida! I left yesterday to visit my parents, who recently moved to the Sarasota area. Plans today include the beach. And that’s it. And I’m totally cool with that.
Today I thought I’d talk about my eats as of late. And for organization’s sake, let’s break it down into snacks, breakfasts, lunches, and dinner.
Snacks
Smoothies
I’ve been doing quite a bit more physical activity in terms of getting out and exercising on the trails, so I’ve been adding a couple hundred more calories into the day in the form of a post-workout smoothie. Every day it’s the same combo, too. I’m obsessed with the coconut milk+chocolate protein powder+almond butter+frozen cherries+frozen banana+honey+spinach combo.
I’ve been eating (drinking?) one every morning after a trail run or spin class. If I’m lifting, I’ll typically just eat a meal afterword (just personal preference.)
Perfect Bars
Yes, they are the perfect bar! I’m all about the Fruit + Nut flavor, and typically I’ll have either this one or a peanut butter one at some point throughout the day.
They’ve got 300-ish cals per pop, and around 16 grams of protein, too, so they work well for my hunger levels (which can be raging at times )
Other snacks as of late have included kale chips and peanut butter filled pretzels
Other fuel
On a recent long hike, Shane and I discovered that we absolutely love Honey Stinger Waffles:
Now, if I go on a long run or hike, I’ll pack one of them to munch on mid-way through. In fact, I had one of these puppies about 2 hours into our hike on Saturday – and felt so much better immediately after consuming.
Breakfasts
For breakfasts, I’ve been all about Ezekiel English muffins, toasted, with butter, along with either some kind of breakfast meat or eggs, and a veggie (usually mushrooms or sauteed spinach.) I find this combo keeps me full, keeps my blood sugar in great levels, and powers me through whichever workout is ahead for the morning.
(I’m never awake enough to think to take a picture around breakfast-time any more. Use the ol’ imagination)
Lunches
Honestly, I’m not a huge fan of lunch. I’m usually busy or doing things throughout the day, and stopping to make and eat a meal in the middle of the day is just annoying to me. Alas, I still get hungry, and I know I need to eat. That said, most of the time lunches are leftover from whatever dinner was the night before.
Last week, I made a huuuge batch of taco meat mixed with cooked bell peppers, and I think I had leftovers of that for 3 lunches. All I did was cook up a tortilla (they come uncooked, and cook in about a minute on the stove – super delicious, and from Costco,) add a little avocado, and then stuffed it with the leftover taco meat. Done and done!
I’ve also been making a big batch of cobb salad, and then adding the last couple of toppings – like eggs and croutons – when it comes time for eating.
There are sometimes, however, when I just snack my way through lunch – with perfect bars, kale chips, buffalo jerky, cottage cheese, and the like!
Dinners
Dinners vary a lot. Shane and I typically go out to eat 3 or so nights a week, I’ll cook 3 nights a week, and then there’s usually 1 night of fend-for-yourself.

Dessert
And of course, I couldn’t forget dessert! If we eat dinner early – at like 6 or 6:30, I’ll usually have a snack around 9. Lately, it’s been a double chocolate chunk Quest bar, topped with Justin’s Chocolate Hazlenut butter.
However, there have also been several nights of bowls of the best ice cream they sell at the store – Blue Bell.
As far as drinks go, I’ve been sticking to water, kombucha, and bhakti chai.
I haven’t been drinking alcoholic bevvies all that much lately (though I’m sure that will change this week on vacation )
Hmm…this post looks a lot like a What I Ate Wednesday post, no? Too bad it’s Monday – I’m a little premature.
Oh well! That’s what I’ve been munching on lately.
What food kicks are you on right now?
those perfect bars sound awesome – i need to find them! i feel like so many bars are all chocolate so i totally dig the nut plus fruit combo as well!

I’m on a smoothie kick myself! I am in a yoga teacher training program, and we typically practice about two hours each morning. By the time we finish, I’m super hungry and thirsty, so a smoothie works out perfectly as my lunch.

Love the look of that cob salad! Lately, I’ve been on a smoothie kick too – so perfect for hot weather. And I need to find myself some more of that Justin’s Chocolate Hazelnut – it is insane how good that stuff is.

I love seeing posts like this probably even more than typical WIAW posts – lots of great ideas! Also, LOVE Honey Stinger waffles. Aren’t they just phenomenal? Immediate energy boost. I’m also glad to hear that there are other healthy living bloggers out there who eat out a lot 🙂

I feel you on the lunch thing! I aim for whatever is easiest and gets the job done. I’ve been loving those chocolate chunk Quest bars with some nut butter on top too – mmm, so good!
