Some thoughts and discussions from me.
Good morning, my friends!
As you read this, I am on the road again with this gal, on our way west to Park City, Utah for the 2014 Blend Retreat!
^pic from last year (and if you’re coming, too, make sure you get the deets on the Hope Foods happy hour I’m hosting in my suite) Although we’ll be in the car for 8 hours, it will be a beautiful 8 hours, as we’re driving from one side of the Rockies, through to the other.
This week’s been busy, as I’ve had to fit as many clients as I could into 2 days, instead of 4 (I don’t train clients on Wednesdays,) and I’ve had several appointments this week as well. Yesterday I worked straight through from 8:00a-7:00p! (and apologize to anyone whose text messages or voicemails I haven’t replied to yet!)
So, I thought today would be a great day to post what I eat on a daily basis. It also happens to be Wednesday, so I’m technically participating in Jess’s What I Ate Wednesday par-tay. But to be honest, I eat pretty much the same thing, nearly every single day.
6:45a – wake up, and realize that I have a client to train in precisely 45 minutes. I make a cup of coffee, add a splash of coconut milk to it, and take Niko for a 15 minute stroll.
I normally like to eat quickly upon waking, but I’m trying out waiting an hour or so a few days a week and see how my body responds, since I’m in a low state of stress in my life right now. If it responds negatively, I’ll go back to eating breakfast within 30 minutes of waking. Which is kind of annoying, but oh well.
7:30a-9:30a – BCAA’s (Richard’s Whole Foods brand – the only one I can find made with all natural ingredients!)
I train a client from 7:30-8:30, and then get in my own workout, that takes about 45 minutes. I completed Workout A in the online boot camp that I’m running right now.
9:30a-ish –ButtermilkflapJacked waffle and some (unpictured) sausage/spinach/red cabbage mixture.
Sometimes basic is better, amiright? A waffle with a little kerrygold butter and some maple syrup. Basic and delicious. Typical breakfasts for me usually include a good portion of meat, eggs, veggies, and sometimes a grain or starch like this
2:30p-ish I had an appointment at 3:30, and ate this lunch shortly before getting ready to head out.
Tacos – it was leftovers from a few nights back. I think this was 80% lean grass fed beef mixed with tomatoes and peppers, stuffed with greek yogurt and avocado.
7:00p-ish – Oh man, this is one of my favorite dinners ever, and it’s so darn simple!
Ground lamb, garlic and curry powder, coconut milk, and cauliflower and spinach served over a bed of spaghetti squash
dessert –
I’m in a Justin’s dark chocolate peanut butter cup phase right now, and if it’s wrong, well then I don’t want to be right.
This is pretty much how it goes every day! Breakfast is some sort of breakfast meat with veggies and sometimes toast or a pancake/waffle. Lunch is leftovers. We rotate through about 6-8 dinners, and dessert is usually either the above, a Quest bar, yogurt and granola (if I’m pretty hungry,) or a spoonful of Justin’s chocolate hazlenut butter
Do your meals vary much from day-to-day? Or do you stick to the same few meals and rotate through?
Fellow dessert lovers: what’s your staple dessert lately?
Have fun a BLEND 🙂
You guys be safe traveling today. Can’t wait to meet you in person!

I go in a lot of food phases, so it just kind of depends on the phase I’m in! My meals/snacks typically rotate every several months depending on the season and what “rut” I’m in at the moment. Justin’s Peanut Butter Cups = heavenly. I could always be in a phase for them. 😉
Looking forward to seeing you in a couple days! Wahooo!

I’m so jealous you’re going to Blend!! I tend to eat the same things everyday too – overnight oats for breakfast, and sandwich + apple for lunch, either leftovers or a new recipe for dinner! My dessert lately has been banana + greek yogurt + peanut butter. Heavenly!

So excited for Blend! My breakfast, lunch and snacks all tend to look pretty similar, but I at least try to switch it up a bit for dinner.

Those tacos look AMAZING!
My breakfast changes from day to day, but I have a pretty solid rotation that often involves oats, toast with nut butter, smoothies, and more oats. Lunch is usually a sandwich, and dinner changes from week to week depending on what’s in the fridge.
I loveeee dessert, so my go-to is dried figs with Greek yogurt!

I basically have a weekday breakfast and a weekend breakfast, haha. I’m currently a teacher, so my meals are pretty similar. That changes in the summer though…two more days!

I’m bummed I’m missing BLEND again. Maybe next year… Hope you have a blast!
I typically eat the same type of breakfast, meat, veggies and eggs. Then carbs post workout and lunch a few hours later which varies. lately it’s been something cold though because it’s already so hot here!
Be safe ladies! I’ll see u at Blend! I’m a non blogger coming & can’t wait. Yay so excited!!
Yum! Your food looks super tasty 🙂 Especially that waffle!

Do you recommend BCAA’s before an AM workout? I have to switch to working out first thing in the morning next week and I don’t really want to eat before. Are BCAA’s a good idea for this situation or 1/2 a protein shake or something? I have read a lot of conflicting ideas!
My dessert for the next 11 months till the next Blend: bars, Good Pops, and Hope Foods chocolate hummus. Thanks for introducing all of us to that deliciousness!

I tend to stick to the same staple meals, but change it up every so often so it doesn’t get boring.
My favorite tho is taco salad! I could eat that every day for WEEKS!
Mmm, your daily menu is amazing. Especially waffles =)
