Good morning!
I decided not to do the typical What I Ate Wednesday post today. Instead, I want to show you all a couple yummy dishes I’ve eaten lately, and end it with a delicious peanut butter protein fudge recipe
I guess I just feel like my daily eats are pretty mundane, and it’s not all that exciting to talk about, or for you to read! Anyway, on to more exciting stuff!
Shepherds Pie, or cottage pie, rather, since I used ground beef instead of ground lamb.

More delicious breakfasts! I’ve been loving my high protein cottage cheese berry crepes lately, but I’ve still been eating my typical savory breakfasts of eggs, sausage, avocado, and sauerkraut.
And now for the protein-packed recipe! I made this on Saturday, and the entire batch is already gone. That’s how yummy it is! I usually snack on it at night, or I the afternoon for a snack.
Peanut Butter Protein Fudge
1 c. vanilla protein powder
1/2 c. creamy peanut butter
1/4 c. coconut oil
1/2-3/4 c. coconut flour
honey as needed (I used 2 tbsp.)
Put all of the ingredients in a bowl, and mix until well combined. I used my stand mixer and it all whipped together in less than a minute. Grease down a sheet of tin foil and place in a loaf pan. Press down the fudge mixture in the pan, and place in the freezer for about two hours. Cut into 2×2 bars, and store in the freezer.
Yum yum.

YUM! Sounds way better than drinking a protein shake to me!! I love the idea of cauliflower mash on top of a shepherds pie- will have to try. Hope your having a good week

I haven’t made Shepherd’s pie in ages – my mom used to make it all the time growing up. Definitely a fabulous meal!

I love LOVE the combination of vanilla & peanut butter. Maybe even more than chocolate & peanut butter. Maybe.
Have you tried this with any other flavored protein powders (like chocolate)? Or maybe even strawberry for a “pb & j” kind of deal? Maybe you should make it for me to test out. 😉

Might be a really silly question but do you need to melt the coconut oil first? The fudge looks really yummy!
I should have clarified – it should be room temperature, so soft/half melted.

What vanilla protein powder do you suggest?
i was just wondering are these measurements 100% correct? i tried to make this and it went horribly wrong. the mixture was all dry and crumbly, ive gone over the ingredients list so many times to see where i went wrong and i did all the measurements as you say. Very disappointing as it was such a waste of expensive ingredients and it just went in the bin 🙁
Sorry, Gemma! Did you use a similar protein powder? My only thought is that maybe the one you used was drier?
