Heya, friends!
Well, we missed the snow here in Boulder County, and honestly, that’s A-OK with me. I’m still not so sure about the cold and snow, here. I’ve never been a fan of winter, in general, but I’m hoping a love for winter sports here in Colorado will change that. Shane and I are taking skiing lessons with another friend in December, and I’m crossing all of my fingers and toes that I pick up on it easily, and fall in love with it. Here’s hoping!
Anyway, I was glad the snow decided to stay up in the mountains yesterday because I was driving all around town (the main reason I dislike snow=driving in it.) Driving in the sunshine was so much better However, it did put a little damper on my plans to pass out umbrellas to people walking in the snow/rain.
Hey, it always works to shadow the sun! haha
KIND’s kindness initiative (is that redundant?) this month is to hand out KIND umbrellas to the public who might be caught in the sun rain without one. (PS – today is the last day to enter my KIND giveaway!) I also visited a few local businesses in town, like Bhakti Chai (who seriously has THE best chai tea drinks I’ve ever laid my tongue on) and Conscious Coffees.

And of course, refueled when I got back home, which (finally) brings me to the topic of today’s post – What I Ate Wednesday!
Breakfast – 5:45
Leftovers from the day before – eggs, sausage, tomatoes, and kale, all warmed up in the microwave.
Snack – 9:30
I broke for a snack around mid-way through the race…I’ll bet you can guess what KIND of snack I had
Lunch – 1:00
I was starving when I got home and had a 30 minute break for lunge. I had a salmon melt, with an entire (3-4 serving) container of salmon, mixed with mayo, relish, and onion. I also added some avocado, and then buttered up the bread and toasted it on the stove. Delicious! This is one of my favorite lunches right now. I enjoyed a Kevita, too:
Snack – 4:30
Right after lunch, I ended up heading over to Breakaway for their 1 Year Birthday Party. I wasn’t sure if I’d be riding at all, but I ended up taking two different instructors abbreviated classes (30 min each,) taking it pretty light. When I got home, again, I was starving.
Shane and I were planning on an early dinner of either Thai or BBQ takeout, but I had to have a snack before, and went with the PB chocolate Quest bar, which is actually one of my least favorites. I can’t wait to try double chocolate chunk!
Dinner – 5:30
Thai food one out (which was my choice) Shane and I both ordered the exact same thing – chicken pad thai, wet, and we both ate the entire large portion.
It was around then that we realized that the time change was overnight, so it was really only 4:30 pm. I continued my bottomless pit-antics throughout the night, as we watched stand up comedy.
Snack – 7:00
An Ozery Bakery Morning Round, which are my new obsession. I love cranberry orange, toasted, with a little almond butter and cottage cheese.
Snack – 8:00
a big bowl of KIND PB Healthy Grains Clusters (my fave granola) in Whole Food’s unsweetened vanilla almond milk (my fave almond milk.) This finally sequestered the tummy beast.
What do you typically reach for when snacking after dinner?
every night.

I’ve been feeling on the opposite side lately. I haven’t been hungry at all. It’s kind of bad – like eating an apple for Dinner. I don’t know what is wrong with me lately, since I’m usually always ravenous! Must just be one of those weeks. My typical after Dinner Snacks are either a healthy baked good of some sort, cereal, or a protein shake.

I’ve been taking more cardio-focused and circuit style classes lately, and I’ve noticed a bit of an appetite jump, for sure. Just gotta roll with it 😉 After dinner, I like mug cakes and yogurt or cottage cheese bowls!

My go to has to be cereal and milk… but there has to be at least 3 types of cereal mixed (high maintenance cereal consumer here).
