Good morning!

First, a Niko update:

We got to take Niko home yesterday!!!! Open-mouthed smile Oh, happy day. As soon as we got the call that they were ready to discharge her, it was like a whole new day. I noticed how perfect the weather has been here this week, the newly snow-capped mountains, and the lack of any sign of rain.

Niko is now home and healthy again. I wasn’t sure if I would be able to say that, and Shane and I spent the entire evening snuggling our little sweet Niko.

Yesterday was also the first day I really got my appetite back. I’m definitely not a stress-eater. I’m quite the opposite. When times get bad, my appetite hits the road, as does my desire to do any form of cooking at all. Since Saturday, we’ve either been getting take out, or picking up already prepared foods at the store, like pre-cooked chicken sausage, grilled veggies, and chicken waldorf salad.

I made these no bake protein oat balls with convenience in mind. Often, I’ll sneak my own workout in between clients, and won’t have time to make a proper meal to fuel my workout. Sure, I’d rather run home and cook a bunch of flapJacked Protein Pancakes, but these balls are great in a pinch!

I didn’t tally up the macros, but just eyeing it, they should be great for either pre or post-workout snacks, and are packed with healthy ingredients.

Chocolate Protein Muesli Balls

2 c. muesli (I used Swiss Muesli Fusion)

2 heaping scoops of chocolate protein powder (I used Whey Cool)

1 T cocoa powder

1/2 t baking soda

2 T peanut butter

1/2 c. almond milk

1 T coconut oil, melted

1 t honey

In a large bowl, mix the muesli, protein powder, cocoa powder, and baking soda. In a separate bowl, mix together the rest of the ingredients. Add the wet ingredients to the dry, and stir until combined. Wait 2 minutes, and then form into 2-inch balls. Place in the freezer for 30-60 minutes to harden.

 

Devour.

Today I’m teaching and training in the morning, and then heading into Denver for a little more work. Speaking of that, I really need to catch ya’ll up on life lately! Have a great Thursday, friends Smile
