Some thoughts and discussions from me.
Good morning, my friends
I’m in high spirits this morning because yesterday, I made the drive into Greeley, CO to take my ACE Group Fitness Instructor certification exam – and I passed!
I’m a very nervous test taker (I doubt myself so much!) so I didn’t go into too much detail in the blog. But for the past week, whenever I’ve said I’m “studying,” it’s been for this exam. Luckily the exam was pretty straight forward and common sense, as long as you studied a bit, and had a decent background of fitness, anatomy, exercise programming, and such. Good thing, because I’d forgotten about the exam completely until I received a little email in my inbox saying, “Your exam is less than one week away!!” Ooops.
Anyway, after driving back home and getting a few things done (i.e. tackle emails that had been pushed back because of studying!) I headed to the gym to train my evening clients. I didn’t get home until 8:00, and have a quick turn around, as I have to be at the gym in about a half hour for my first client. All part of the job
So last week for What I Ate Wednesday, I showcased a long day filled with clients and classes – a busy day. Today I thought I’d share with you a day of eats on my least busy day – Sunday!
This past Sunday I started off the morning with a walk with Shane and Niko. It was a crisp and sunny morning and perfect for a morning walk! About an hour later, I was in front of the stove, making us some breakfast:
French toast + pumpkin pancakes with coconut butter and peanut/coconut butter, sauerkraut, and
After breakfast, we headed to church, and then did some grocery shopping at Sprouts. They were having a sale of grass-fed beef for $4.99 so I stocked UP. I also picked up more avocados. They’re SO cheap right now! And so delicious. I probably have 5 ripening right now in the pantry. Ob-sessed.
Moving on, shortly after we got home and did some cleaning up around the house, I made some lunch, which was simply reheated leftovers that were in the fridge.
chicken, broccoli, and sauce (I think this one was coconut aminos, ginger, garlic, s&p, crushed red pepper, and a bit of coconut milk) over a big bed of basmati rice.
Sunday was pretty much dedicated to studying for my aforementioned group fitness classes. I studied for about 5 hours – a couple of them being at the pool. Right around the time I was ready for a break, I received this text message from my friend Katie:
A group of us were planning on having happy hour and making some margaritas. We had the tequila, our friend Susie had the orange liquor, and Katie was in charge of picking up a lime….or 80. LOL It was pretty funny. Then soon our friends gathered on the deck for some margaritas, carrots and hummus, and chips and salsa.
Good times!
After we parted ways, Shane and I got started on a simple dinner of burgers and fries:
I hadn’t gotten in my once-a-week burger, so we had to do something about that And these turned out delicious!
We were both sufficiently full after this meal, but we rallied for this dessert…
This would be (gluten-free) muesli banana bread! Ya’ll know by now that I’m pretty obsessed with MuesliFusion Morning Zest (my fave) cereal. I had about half a bag left the other day and decided to turn it into banana bread. Thankfully it turned out really good, or I’d be pretty ticked off about wasting the stuff, haha. I planned on sharing the recipe today, but I’m running out of time! Gotta go train a client, but I’ll have the recipe up tomorrow
Have a lovely day!
What’s your typical Sunday breakfast?
Can’t wait for the banana bread recipe! Looks amazing. Congrats on passing the test too!

The office is closed on Sundays which is nice because it’s a day I know I don’t have to work, even when our schedules get moved around. My breakfast doesn’t usually look different (i’m usually too hungry to cook anything more) 😉 but I love the slow start to the day, including taking my time to eat breakfast.

I’m curious, why did you go with ACE? I’ve also heard really good things about AFAA’s Group Exercise Cert. Do you have that one? I’m considering getting my group exercise cert, so just weighing my options! Glad to hear the test went well! 🙂

I went with ACE because that’s who I’m with as a certified PT, too. It’s nationally accredited, and I love their continuing education support. They’re very proactive about keeping their members current with new research and fitness trends! I have also heard that AFAA’s great too, though 🙂
My Sunday breakfasts vary. I like to go out for a big brunch occasionally, or we’ll make something a little special at home. Like chilaquiles or eggs in purgatory with thick, crusty bread.

Congratulations on your exam! I had no doubt you would do great though!
I’m an oatmeal girl all the way for breakfast. Oats, with protein powder and chia seeds. Favorite was to start the day every day…yeah, I’m so unpredictable. 😉

Love that you have a “once a week burger” rule. I am ALL about eating whatever you want in moderation! Also… I too am obsessed with avocado. I have 4 right now in my fridge as we speak. Happy WIAW! 🙂

My Sunday breakfast usually isn’t any different from any other day of the week…apparently, I’m lazy when it comes to breakfast. I wouldn’t mind some french toast though! 😉
Love your once-a-week burger rule. I just tried a bison burger for the first time a few days ago, and I really liked it!

Mmmm. We’re actually having bison burgers tonight!
Any snacks during the day?
And – how did you make your pancakes? Also, that white rice looks so good – need to get some. Also curious about your French fries – good looking.
My body is craving beef. Craving it But nothing humane around here. I’m about to screw it and eat whatever is available.
Hmm nope, not on that day! I’m not a huge snacker, though- it inconveniences me, haha. White rice is a frozen organic kind – I get it at Sprouts. And the French fries are Alexia 🙂
Yum!! I was having one or two burgers a week but I’ve put it on the backburner while I try to lose some fat. Only a few more weeks to go, thankfully!

CONGRATS! I knew you would nail it! Maybe that lucky shirt helped?? (I need to go to LH and get one!). No, really- you knew the content and that studying paid off!
So, I love French Toast and I love sauerkraut. But, I don’t know if I could have both on the same plate….
The impromptu margarita HH rules! Your neighborhood is so freakin’ cool.

um, how fun is the happy hour margarita night?!! I need some of that up in here… yum! congratulations on the exam 🙂
My favorite breakfast right now is forbidden rice pudding with peaches and pecans. I’m kind of obsessed with peaches now. I’ve never been a huge fan and now I can’t wait until the official season starts!

Congrats on your exam!! Pancakes are the perfect Sunday morning breakfast! I like to keep my Sundays low-key too. I usually just relax, get the house in order and usually do some cooking and baking to prepare for the week ahead.
