Man, is it H-O-T here in Colorado. It got up to 100 degrees on Monday, and then yesterday broke the record and reached 98 degrees. It’s funny though, because it’s my first summer here in Colorado, and 100 degrees here feels FAR different than 100 degrees in Illinois. Sure, it’s hot, and the sun is INTENSE, but it’s still not that oppressive heat that you feel when it’s also incredibly humid. I’m all, “what are you guys complaining about?!” to my CO friends
That was at 8:05 last night!
Because of the heat and extremely low humidity, wildfires were pretty bad yesterday. The hot, dry weather combined with some windy conditions yesterday lead to 3 different forest fires in the state. There were evacuations and houses burned I’d love to live IN the mountains (instead of next to them) but the chance of my house being swallowed up by a fire is incredibly scary.
Yesterday I had a mix of a training day that spanned off and on from 10:00-7:00. Since it’s Wednesday, I thought I’d showcase my eats that went along with the work day for What I Ate Wednesday.
The morning started off a little chaotic. I had to deal with some things that ended up stealing my appetite, and although I woke up at 6:30, around 7:30 a walk with Niko sounded better than breakfast. When I got back around 8:30, I was then more than ready to break the fast.
Scrambled eggs (I split 5 eggs with Shane) and spinach cooked in ghee, half an avocado, a piece of raisin bread toast with coconut oil, and sauerkraut. I do like sauerkraut, but I don’t necessarily crave it. Although I enjoy it, I mainly eat it for its probiotic effects. This version is some I made myself!
Shortly after breakfast, I walked over to meet my first client of the day. I love training this client because she loves to be pushed. Most of my other clients are more in the strength adaptation phase, which is fun, too, but this one’s a nice change Then I had about an hour and a half until I had to teach boot camp class, so I got in my own workout.
Needless to say, I took my workout indoors yesterday (aside from a 7:30 a.m. Niko walk) with a full body resistance workout. After a dynamic warm up, here’s some of the stuff I did:
Forearm plank
Stability ball mountain climbers
Goblet squats
Lat pull down
Barbell step ups
Push ups
And then I finished with a little metabolic circuit of 1:1 work:rest ratio. I did the stair climber on level 12 for 1 minute, and then 1 minute of crunches, 5 rounds for 10 minutes total. And I finished everything off with some foam rolling and stretching.
I had to work right through the lunch hour, and luckily I had a couple bars on hand to hold me over until lunch:
My favorite KIND bar!! And then I also had half a larabar that I’d started on after a hike this weekend.
Once I got home and showered, I dug into a little leftovers for lunch:
Leftovers – bison and broccoli with jasmine rice (my favorite – the only kind I’ve been eating lately)
Then I did some computer work – emails and details for some assignments – and filled out some health questionnaire forms. I’m going to my first acupuncture appointment today, and I’m actually looking forward to it! I’ve only gotten it once in college, and that was when I was a reporter and got it done for a story. And then last year I got it done in my foot, but that was an isolated incident. I guess I should say this will be my first time starting a regular acupuncture practice.
Before heading back into the gym to train again, I had a snack, since I knew I’d be training during my usual dinner hour.
Half an avocado with some sunflower seeds – yum! I was actually craving a smoothie for the first time in…like 6 months, but unfortunately my Vitamix is out of commission. Thankfully, Vitamix rocks, and they’re sending me a new container and blade to fix that right up.
And then when I got home, I made one of my staple dinners – baked chicken legs, sweet potato w/ ghee, celtic sea salt, and cinnamon, and green beans.
I loooove baked chicken legs. Just brush on a little butter, salt, pepper, and garlic and bake away! With a baked sweet potato – so delicious.
And even though it was a late dinner, dessert was still to be had. About a half hour after dinner, I polished some Love Crunch granola with some whole milk.

It’s funny – I typically don’t snack in between meals. I rather prefer to just eat large meals that last me 5-6 hours – I just don’t like to take the time to think about and prepare a snack, but today I had three of them! Well, I suppose I always have a night time snack, but that’s more of a dessert…

Sure have, for many things, my headaches, running injuries and fertility. It worked for some and was a waste of money for others but it was always relaxing! I love Kind bars, they are so good!

I would love to try acupuncture sometimes, I’ve heard some great things about it. And I’ve been trying to include more probiotic-heavy foods in my daily intake, but I’ve resisted sauerkraut…I remember the smell turning me off as a kid so I refused to try it. Still haven’t, but I should at least give it a shot!

It’s been warmer than usual for this time of year out here in Salt Lake too! Thankfully the last couple days have cooled down a little bit. We had some terrible fires out here last summer… Praying that doesn’t happen again!

It’s so funny that you say that about the weather! Here in Oklahoma our 98 degrees days often feel like 120 because of the humidity, and I always think Colorado is a relief even if it’s hotter than normal there!

I’ve always wanted to do acupuncture, but have never had the opportunity. Can’t wait to hear your thoughts on it! I wish I could say Atlanta had no humidity…that and I wish I could say my air condition wasn’t broken again for the second time already this year. Hopefully it will be fixed tomorrow and I can stop sweating bullets inside. I hope you’re feeling well! xoxo

That weather is brutal! The avocado and sunflower seeds sounds like a great combo. I need to remember that. I also need to know more about using ghee?

It’s basically the stuff dreams are made out of. It’s butter that’s used a lot in Indian dishes!
I’ve had it in dishes before, but never used it at home. I am going to have to get myself some!
You made your own sauerkraut! Was it hard? I’ve thought about doing it but it seemed like a long process. I’ve been wanting to try Ghee also since I eat a mainly paleo diet. Does it taste similar to butter?

I have a TON of digestion and anxiety issues and I tried acupuncture once (holy crap expensive), but he could only put in like 3 or 4 needles…anything in my legs and anywhere remotely near my stomach caused me pain…he said that showed just how tense + just how bad my digestion is (I’m constipated…shamefully admitting to binging, etc) 🙁 Sorry, shameful really.
I would love to go back cause I hear so much good. But I’m afraid it would take a LOT of sessions (of gradual needle exposure) in order to help “fix’ me…sounds great…but if its going to take a LOT of sessions, I have to reconsider the price…if I knew a few sessions would cut it , awesome. But knowing that it could be a TON of expense to even just reach a 1/4 of the way there is just not …practical. Oh my 🙂
