Good morning Sun

I’m still in the mountains with the fam. Today’s our last day, and then we’re headed back to Boulder County later this afternoon. Unfortunately I have to say goodbye to my brother and his girlfriend, but my parents are sticking around until Saturday Open-mouthed smile

For today’s What I Ate Wednesday, I’m showcasing my eats from yesterday. We were all pretty beat, so we took a day off of hiking, but that didn’t keep us out of the mountains.

We made the drive on Trail Ridge Road, which features razor’s edge drop offs, heights of nearly 13,000 feet, and hair pin turns. But beforehand, we all had a leisurely morning at the cabin. After a good night’s sleep (fin-al-ly) we all woke up and my mom cooked us all some bacon and eggs:

Except I was totally not feeling eggs (I know – weird – but the thought of eating them made me feel sick!) and just stuck with bacon, toast + almond butter, and a bowl of plain, whole milk Greek yogurt with blueberries. Plus vitamins Smile

While breakfast digested, my mom and I took a walk while everyone else relaxed and got ready.

Then after a little while, we all packed in the SUV and headed out for Trail Ridge Road. About a half hour in, I snacked on a thinkThin bar:

Except I had the brownie flavor, which is probably my least favorite (chunky peanut butter is amazing, though!)

We were on the road a lot longer than we’d originally planned. The sights were just gorgeous…

Eventually, we stopped for a quick picnic:

Turkey sandwich and a beer (looove Odell 90 Shilling!) + lots of shared chips and hummus, beef jerky, and another granola bar. I’m not sure why I was so hungry during the day! Must have been all of the hiking from Monday and Tuesday. Being in the altitude does funny things to the appetite, too. The day before I had one huge meal, and then just little snacks here and there.

That night, we had reservations at my favorite steakhouse ever. A former client once told me she never goes to Rocky Mountain National Park without dining at Twin Owl’s Steakhouse, and it seems to be holding true for me as well!

Last time Shane and I dined here, I made the mistake of straying from my beloved filet mignon, although the lamb chops were awfully good. This time, however, I went back to the best steak I’ve ever tasted in my life.

filet mignon with pistachios, blue cheese, and Béarnaise sauce, potatoes, and roasted seasonal vegetables. I also, of course, had some crusty bread dipped in herbed olive oil, and my mom, my bro’s GF, and I split a luscious bottle of pinot.

Today we’re heading to breakfast, and saying our goodbyes to my brother and his girlfriend. I wish they had one more day!
