Good morning!
It’s only Saturday morning, but much of the weekend is already underway over here. Yesterday I attended the Oakley event in Lyon’s through my fitfluential ambassadorship– it was an all day event, and by the end I was beat!
-with Lauren and Heather (from Lauren’s instagram.) There were maybe a couple hundred girls at the event and it kicked off with a boot camp, which proved to be interesting as we all proceeded to do burpees in the mud Aint no shame in getting a little dirty in your workout!
I’m sure my own boot campers can relate, as I teach in the park, too. The rest of the day involved a few breakout sessions, lunch, and just hanging out with like-minded girls! It turned out to be a success for Oakley, I’d say. Everything seemed to run pretty smoothly
And then after running home and getting ready, I met back up with Lauren and her husband, Greg, as well as our other good buddies from the ‘hood. It was first Friday in Fort Collins, which is an art-walk and beer-drink sort of thing. We started out having dinner somewhere near the square, and then meandered through art galleries and a couple bars the rest of the night:
I’d never been to Fort Collins in the day time, and the square was so cool! I want to go back up there and do a bike and brew tour ASAP.
Anyway, I’m about to head out to teach my Saturday morning boot camp, but I wanted to pop in with another meal plan and grocery list for the week. I skipped last week, and this week’s meal plan is…a bit different…because…
there’s no meal plan!
Even when I don’t have a meal plan, I’ll still go to the store for the weekly trip. When I forget (or, um, am too lazy) to meal plan, then I’ll head out to the store knowing I need to get 3-4 proteins, some veggies or frozen vegetables, and an in-case meal – like some frozen pizzas. I already had some frozen pizzas in the fridge, so here’s what I got:
From Sprouts:
Sandwich bread for Shane, GF raisin bread, sweet potato, Diet Hansens soda for Shane, basmati rice, my favorite lotion (was 25% off!) ground beef (grass-fed ground beef was on sale for $4.99/lb, so I stocked up!) half and half, chipotle dressing, coconut milk, quinoa pasta, and gelato.
From Whole Foods:
sweet potatoes, kale, shaved brussels sprouts, citrus, breakfast sausage, chicken, pork chops, eggs, tortilla chips, coconut water, coconut ice cream, taco shells, and cabbage.
And I also placed another Vitacost order:
I couldn’t help myself – they were having customer’s faves 15% off, and apparently a lot of my favorites are everyone else’s, too! Like coconut water and my favorite almond butter And I’d be remiss if I didn’t share my $10 off coupon for your next order! – Almonds and dried blueberries for hiking trail mix, cinnamon, curry powder, almond butter, canned pumpkin, granola, and coconut water (Blue Monkey – my new favorite!!)
So just buy looking at what I got, here’s a tentative meal plan for the week:
Saturday/Sunday/Monday breakfasts – breakfast sausage + kale + either eggs or pumpkin coconut breakfast cereal
Saturday – probably out or pizza after the movie tonight
Sunday – burgers or tacos
Mon-Thurs breakfasts (usually eaten on-the-go) – breakfast meats, hardboiled eggs, leftovers, pumpkin coconut breakfast cereal
Monday – Food trucks night
Tuesday – Chicken stirfry with tri-color peppers (already in freezer) and white basmati rice
Wednesday – Salmon (frozen, in freezer,) broccoli, sweet potatoes
Thursday – Spaghetti + side salads
Friday – out
Lunches I’ve been having a bit of trouble with lately. I’ll usually have leftovers OR salmon/sardines over some lettuce w/ a sweet potato + butter, but lately that second combo just has not sounded appealing to me. Instead I’ve been having a couple smaller lunches – like rolled up avocado in turkey/ham slices w/ some chips or a veggie and then something completely boring like beef jerky and dried mango. I’m in a lunch funk, I s’pose.
And with that, I’m off to teach some boot camp! Then we’re going for a hike and farmer’s marketing. Should be a nice little Saturday
What are some of your typical lunches throughout the week?
Looks like an adventuresome and fun day! Lots of goodies from the store too! I’m a salad girl for lunches. I normally pile leftovers from the night before on a salad or I’ll have a salad with eggs on it. I’m pretty sure I was a rabbit in a former life…

I either take leftovers or a salad to work or grab a salad from Sweetgreen. Looks like a great meal plan made on the fly. Impressive!

I seem to always forget something if I just “wing it” and not meal plan. Then I realize I need to go BACK to the store during the week, and that drives me crazy.
Some of my regular lunches lately have been turkey/avocado/spinach sandwiches, big smoothies, cheese & chicken quesadillas, or leftovers. Lunch is a meal I struggle with sometimes too.

My lunches are almost always salads or leftovers. My problem when I don’t meal plan is that I still end up spending like the exact same amount of money, but I get home and am like, “How is there nothing to eat?!”

I’m having the same sort of week with no real meal plan yet but some ideas… I typically do my shopping at Sprouts and Whole Foods but need to check out Vitacost! Great finds!

I like tempeh and roast veggies. I cook up the veggies on Sunday and then use them for the week.
I also do leftovers from dinner the night before.
