Today is a super exciting day because after teaching a core class and meeting with a client, it’s tour guide time! My parents are visiting today, and I’m taking them all around Boulder today. I’m so excited for their stay that I even baked for them. Ok, fine, I baked for me, but I’ll share. I guess
Yesterday I mentioned some baking went down in the casa over the weekend.
Somewhere between season 5 episode one and season 5 episode twelve of Parks and Rec, my sweet tooth came a-callin’, and I answered with cookies.
But not just any cookies! These are my coconut chocolate chip bars, in cookie form. Truth be told, I’m more of a cookie person than a cookie bar person (but at this rate, we’re just splitting hairs – give me cookies in any shape) so I decided to try and turn my bars into cookie form. Plus, I thought the recipe deserved not only its own post, but also some better pictures.
Success! Chewy, coconutty, chocolatey success.
Coconut Chocolate Chip Cookies
adapted from the bars
prep time: 5 minutes
bake time: 12-14 minutes
makes: about 12 cookies
1/2 c. almond butter
1 egg
1/2 c. unsweetened, shredded coconut
2-3 tbsp. honey (depending on desired sweetness)
1/2 tsp. vanilla extract
1/4 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/2 c. dark chocolate chips
Preheat oven to 350. Combine all of the ingredients in a bowl. Line a baking sheet with parchment paper, and scoop the cookies out on to the sheet. Bake for 12-15 minutes (check on them after 12, bake another minute or so, etc – the altitude makes baking a little wonky here in CO.)
Cookie to the face.
Today is a super exciting day because I get to see my parents!! They’re in town visiting me, and as soon as I teach my BLAST core class and talk to a client, I get to see them for the first time since Christmas Yay. I think some hiking and shopping and eating is on the agenda today. Have a good one!
